Quick ‘n Easy Korean Banchan (Side dish)-Mini Ground Turkey pancake Recipe

juns
Today we will make one of Juns (pancakes), Donguranddaeng, mini Korean pancake. In the picture, Donguranddaeng is the one on the left. The middle one is Tofu simply fried with some salt sprinkled. And the right Jun is Hobak Jun, fried Zucchini.

Let's start!

Ingredients

1 carrot
1 onion
1 bunch scallions
1/2 to 1 pack tofu
1 regular pack ground Turkey
(any kind of meat)

1/2 tbsp sesame seeds
1 tbsp sesame oil
2 tsp salt
1-2 eggs
1 tsp black pepper
1 tsp finely chopped garlic

veggies
Finely Chop all veggies like so.

mash tofu
Open Tofu and place it in a strainer. Use a spoon to mash tofu and squeeze out excess water. Mash gently so tofu doesn't go through the strainer. The idea is to mash it while squeezing only water out.

jun mixture
Put all the ingredients in a mixing bowl. Mix.

ready mixture
This is the mixture all ready to be fried.

spoon mixture
Now here are two options from now on:
1. Result:
Better controlled shape-Shape mixture into small round patties. Get flour & beaten egg in separate bowls to dip them before frying. Please refer back to Hobak Jun Recipe. First dip in the flour and then dip in the eggs.
2. Result:
Quicker method-Add more eggs so the mixture can be spooned right onto a frying pan.

You choose which option suits you better.
And you are done!
Enjoy your pancake!
